My name is Brenda.  I'm a Single Mom, Cook, Graphic Artist, Nurse, photographer, Referee, Therapist, Mediator and a huge Sports Fan. lol you know what i mean especially if your a mom. We wear a lot of different hats everyday. Like many families we live on a tight budget. Every penny counts. I love to cook. I would get frustrated when i would pull up an recipe and there were ingredients I never heard of or did not have laying laying around in my cupboards. I mean really who has anchovies paste, wine, pancetta,capers, fresh spices or 20 different types or nuts or pasta on hand. I know my kitchen isn't stocked with a lot of specialty items.So i had to find alternatives that worked yet still tasted good. So I would experiment with recipes  to make them easy yet tasty and made out of the items i keep in my kitchen. 



There are some things i keep on hand in my kitchen at all times.There items you will never find me out of. they are necessities. They are Flour, Sugar, Salt,Pepper, House Autry Chicken Seasoned Breading Mix, Garlic Powder, Paprika, Cayenne Pepper, Vanilla, Butter,Chili Powder, Minced Garlic and the most important one is Everglades Seasoning. I have other spices but these i cant live without. Everglades Seasoning is the perfect seasoning to use on everything. you can order it online if your local stores don't carry it. i talked to one of the local stores in my area and they started carrying it. You wont be disappointed in it. Trust me.



What I have learned over the years is to have fun in the kitchen. Get your kids involved in cooking with you. That's precious time you will have with your kids and you are making wonderful memories that both of you will remember for the rest of your lives. Don't be afraid to take chances. Try different things when you cook. you will be surprised what experimenting with different spices will add to the flavor of your food. My 17 year old and I have used some strange things we had in our kitchen. some worked out really good and others not so good but we gained knowledge and some new recipes. Like using white chocolate bark on our beef roast. It gave the roast a better flavor. We also have tried different flavorings in the water in our broiler pan we use vanilla when we cook beef and lemon or lime juice with chicken and pork. we also have used mint in the water for beef, pork and chicken. Each gives it a unique flavor we found by trying new and different things. So don't be afraid to get creative. We have also learned every recipe can be changed to make it more friendlier and easier using items we already have. 


Making food from scratch is not that hard. It doesn't take any more time then preparing the box meals and its a lot better for you then the prepackaged food. To make homemade tortillas it takes less the 5 minutes and 4 ingredients and they taste so good. I will be posting the recipe for them soon. Making homemade food is so rewarding , you will be proud of yourself and the meals you serve. I hope you like my Blog and it helps you to learn how to enjoy cooking and to be adventurous in the kitchen. There are no bad cooks there are just cooks who doesn't have fun.
